1. Blade Thickness
Blade thickness refers to the thickness of the knife at the spine.
A thicker blade is generally stronger and better suited for demanding tasks, while a thinner blade usually slices with less resistance.
However, spine thickness alone does not determine cutting performance.
2. Blade Grind
The blade grind is the overall shape that tapers from the spine toward the edge.
Common grind types include:
- Full Flat Grind
- Hollow Grind
- Saber Grind
- Convex Grind
- Scandi Grind
Different grinds balance cutting ability, durability, and ease of maintenance in different ways.
3. Edge Thickness (Behind the Edge)
One of the most important—but often overlooked—measurements is the thickness immediately behind the cutting edge.
Two knives sharpened to exactly the same angle may perform very differently if one blade is significantly thicker behind the edge.
A thinner edge geometry reduces cutting resistance and improves slicing performance.
4. Sharpening Angle
The sharpening angle forms the final cutting bevel.
Lower angles generally improve cutting efficiency, while higher angles provide greater edge strength.
However, changing the sharpening angle cannot completely compensate for poor blade geometry.
5. Edge Apex
The edge apex is where both bevels meet to create the cutting edge.
A knife only becomes truly sharp when the apex is continuous from heel to tip.
This is why proper burr formation is such an important part of sharpening.
